Egg Stew

Egg Stew with coconut milk .

Ingredients

  1. Hard boiled Eggs --- 4/5/6..
  2. Onion --- 1 large- sliced
  3. Potatoes --- 2 large cubed
  4. Green Chillies --- 3 slit lengthwise
  5. Ginger --- 1.5" finely chopped
  6. Turmeric powder --- ¼ tsp;"
  7. Coriander Powder--- 2 tsp
  8. Pepper powder --- ½ tsp
  9. Garam Masala--- ¼
  10. Coconut milk ---1 cup
  11. Salt --- to taste

Method

  1. Heat up 1 table spoon oil in a pan and saute the sliced onions till it becomes soft.
  2. Add sliced ginger and slit green chillies and continue sauteing for another 3-4 mins.
  3. Add masalas and stirr for 2 mins. Add 2-3 cups of water and bring it to boil.
  4. Add the potatoes and cook it with the lid closed till it becomes almost soft.
  5. Add de-shelled boiled eggs(with 2-3 slits on it)and continue boiling till the potatoes are soft.
  6. Add the Coconut milk and stirr well. DO NOT boil once the coconut milk is added.

Notes

  1. This is a 'Multi Recipe'. If you omit eggs from this, it becomes a perfect vegetable stew. You can make this a Chicken or Beef stew as well.
