Egg Stew
Egg Stew with coconut milk .

Ingredients
- Hard boiled Eggs --- 4/5/6..
- Onion --- 1 large- sliced
- Potatoes --- 2 large cubed
- Green Chillies --- 3 slit lengthwise
- Ginger --- 1.5" finely chopped
- Turmeric powder --- ¼ tsp;"
- Coriander Powder--- 2 tsp
- Pepper powder --- ½ tsp
- Garam Masala--- ¼
- Coconut milk ---1 cup
- Salt --- to taste
Method
- Heat up 1 table spoon oil in a pan and saute the sliced onions till it becomes soft.
- Add sliced ginger and slit green chillies and continue sauteing for another 3-4 mins.
- Add masalas and stirr for 2 mins. Add 2-3 cups of water and bring it to boil.
- Add the potatoes and cook it with the lid closed till it becomes almost soft.
- Add de-shelled boiled eggs(with 2-3 slits on it)and continue boiling till the potatoes are soft.
- Add the Coconut milk and stirr well. DO NOT boil once the coconut milk is added.
Notes
- This is a 'Multi Recipe'. If you omit eggs from this, it becomes a perfect vegetable stew. You can make this a Chicken or Beef stew as well.
