Guntur Chicken- Spicy

Andhra style spicy chicken -dry .

Ingredients

  1. Chicken --- 600gms
  2. Coriander seeds --- 2 tbl
  3. Cummin seeds --- 1+1 tsp
  4. Pepper corns --- 1 tsp
  5. Red Chillies --- 5 nos
  6. Red Chilli powder --- 1 tsp Kashmiri
  7. Onion --- 1 Medium sized(Wedges)
  8. Tomatoes --- 2 nos )
  9. Garlic --- 4-5 cloves chopped
  10. Ginger --- 1 small piece)
  11. Green Chillies --- 2 nos)
  12. Curry leaves --- 1 stem
  13. Salt --- to taste 1½ tbsp

Pre-prep (Marinate)

  1. Roast the Coriander seeds, 1 tsp cummins, peppercorns and red chillies in low heat for 3-4 min.
  2. Grind them to a fine powder when it turns cold
  3. Remove 2 tsp of this powder and keep it aside.
  4. Add the Ginger and Garlic alongwith a little water and grind to a paste.
  5. Marinate the chicken and keep aside for half an hour.

Method

  1. Heat up 3 tbls oil. Add mustard and 1 tsp cummin to splutter.
  2. Add Onion and green chillies and saute for 4-5 min in medium flame.
  3. Add chicken and saute for 2-3 mins.
  4. Add tomatoes and curry leaves
  5. Add salt to taste
  6. Add 1½ cup water.
  7. Continue stirring adding the ground masala little by ittle for 2-3 mins.
  8. Cook for 15 mins with the lid on.
  9. squeeze a little lemon if you like.
