Potato Subji

Great for Chapathis / Masala dosa .

Ingredients

  1. Potatoes --- 4 nos
  2. Green Chillies --- 11 nos*)
  3. Onion --- 1 Medium sized
  4. Garlic --- 4 cloves
  5. Turmeric powder --- ¼ tsp
  6. Salt --- to taste 1½ tbsp

Method

  1. Heat up 3 tbls oil in the pressure cooker. Add mustard and 1 tsp lentil to splutter.
  2. Cut the potatoes into small cube pieces and place it in the pressure cooker
  3. Add the sliced onion, green chillies, garlic, turmeric powder and salt.
  4. Add water just enough to cover and pressure cook for 5 mins. ( Make sure that it is not over cooked.)
  5. Open the pressure cooker and smash the potatoes leaving a few semi-smashed.
  6. Add salt if needed
  7. Garnish with chopped cilanthro

Notes

  1. This is very good to make Masala Dosa. It can go with Chapathis, Rotis or Pooris as well.
  2. * Vary the number of green chillies to control the spice level.
