Shanghai Fried Rice
Fried Rice with Noodles mixed .

Ingredients
- Basmati Rice --- 1 cup*
- Egg noodles --- 200gms
- Chicken --- 1 piece
- Capsicum --- 1 no.
- Garlic --- 5 cloves
- Ginger --- ½"
- Green Chillies 3nos
- Scallions ---6 nos
- Carrots (Cubed) --- ½ cup
- Eggs --- 2-3 nos
- Rice / White vinegar ---1 Tbs
- Chilli Sauce --- 1 Tbs
- Soy Sauce --- 2 tbs
- Mushrooms --- 2-3 (Optional)
Pre-prep
- Soak one cup of raw rice (preferably Basmati or Sona Masuri) for about 20 minutes and drain.
- Transfer the rice to boiling water with a pinch of salt and cook up to 90%. (8-9 minutes). Drain all the water off and
spread it on a flat surface preferably on a sheet of baking paper.
- Boil 1 packet (200gms) of egg noodles to cook till it becomes 90% soft (8-9 minutes). Drain off all the water and keep it aside to cool down fully.
- Boil a piece of chicken to a shreddable consistancy. Add a small pinch of salt while boiling.
- Scramble 2-3 eggs and keep it aside.
Method
- Heat the wok over the highest heat that the stove can make and pour one tbl spoon of vegetable oil.
- Stir-fry garlic, green chili peppers, carrots, the white part of the scallions and green bell peppers for about a minute. Don't overcook.
- Add the noodles followed by the sauces--hot chili sauce, Soy Sauce, and Vinegar and mix them 'quickly'
- Add rice, stir mix very carefully without breaking the rice.
- Add chicken (Shredded or cubed) and scrambled eggs and stir-fry or toss everything together with the wok still on high heat for a couple of minutes. Move it constantly so that everything in the wok makes contact with the hot surface several times. Toss it a few times if you can ! After two to three minutes, taste the rice and add ground black pepper and more salt if needed. Mix thoroughly, turn off the heat, garnish with the green parts of the scallions and serve hot.
Notes
- This is a 'Multi Recipe'. For example, if you remove 'Chicken' from this, it becomes a perfect vegetarian recipe. You can also add or remove Chicken, Shrimp, Pork , etc. and make your choice of Shanghai rice.
- *You can vary the ratio of Rice and Noodles to any level as per your taste. My personal preference is more Noodles and less rice.(I may have to call it Shanghai Noodles..LOL)
- Once the ingredients are kept ready, the actual making time is hardly 3-4 minutes. So, be ready to do things really fast.
